With over 18 years of food and healthcare experience, Dr. Boileau’s previous roles include Regulatory Affairs at Abbott, Principal Scientist in Applied Medical Nutrition Sciences at Nestle, and Associate Director of Scientific & Regulatory Affairs at Cargill. Her expert opinions have been featured in interviews for National Public Radio and The Wall Street Journal. Her professional interests focus on elevating the role of nutrition for good health, global nutritional practices, and the role of nutrition in healthy aging. Amy received a Ph.D. in Nutritional Sciences from the University of Illinois at Urbana-Champaign and completed a post-doctoral fellowship in cardiovascular disease genetics at the University of Cincinnati.
